Grilled Lemon Garlic Scallops are a simple yet elegant seafood dish, featuring tender scallops marinated in a tangy lemon-garlic sauce and grilled to perfection. Ingredients

  • 1 pound large scallops, cleaned and patted dry

  • 2 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • 2 teaspoons lemon zest

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

  • Lemon wedges (for serving)

Instructions

  • Prepare the marinade: In a small bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Stir well to combine.

  • Marinate the scallops: Place the scallops in a shallow dish or resealable plastic bag and pour the marinade over them. Toss gently to coat the scallops evenly. Cover and refrigerate for 15-20 minutes (do not marinate longer, as the lemon can “cook” the scallops).

  • Preheat the grill: Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat as well.

  • Grill the scallops: Remove the scallops from the marinade and thread them onto skewers (if using), or directly place them on the grill. Grill for 2-3 minutes per side or until the scallops are opaque and slightly browned. Be careful not to overcook them.

  • Serve: Remove the scallops from the grill and arrange them on a serving platter. Garnish with fresh parsley and serve with lemon wedges.

Notes

For added spice, include a pinch of red pepper flakes or cayenne pepper in the marinade.Fresh herbs like thyme, tarragon, or basil can be substituted for oregano to change up the flavor.Serve the scallops with grilled vegetables, a light salad, or a side of couscous or quinoa.
