Grilled Chicken Skewers are a flavorful and juicy dish made with marinated chicken chunks cooked to perfection on a grill or grill pan. Perfect for BBQs, easy dinners, or meal prep, these skewers are simple, healthy, and delicious.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Wooden or metal skewers
  • Optional: chopped bell peppers, onions, or cherry tomatoes

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Cut the chicken into 1.5-inch chunks.
  3. In a large bowl, whisk together olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper.
  4. Add chicken pieces to the marinade. Toss to coat well. Cover and refrigerate for at least 30 minutes, up to 4 hours.
  5. Preheat grill or grill pan over medium-high heat.
  6. Thread chicken (and optional vegetables) onto skewers.
  7. Grill for 10–12 minutes, turning occasionally, until chicken is cooked through and has grill marks.
  8. Let rest a few minutes before serving.
