This Grilled Chicken Marinade combines zesty citrus, savory garlic, and fragrant herbs to make every bite of chicken juicy, flavorful, and perfectly seasoned. It’s a simple yet delicious way to elevate your grilled chicken, whether you’re cooking for a family dinner or hosting a BBQ.

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons soy sauce
  • 2 tablespoons honey or maple syrup
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional for a slight heat)
  • 4 boneless, skinless chicken breasts (or thighs)

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, soy sauce, honey, garlic, Dijon mustard, oregano, thyme, salt, pepper, and red pepper flakes (if using).
  2. Place the chicken breasts (or thighs) into a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 8 hours.
  3. Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stove.
  4. Remove the chicken from the marinade and discard the excess marinade. Place the chicken on the grill or grill pan and cook for 6-8 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C) and is no longer pink in the center.
  5. Remove the chicken from the grill and let it rest for a few minutes before serving. Slice and serve with your favorite sides.

Notes

For a fresh herbier taste, add rosemary, parsley, or basil to the marinade.If you like spicy food, increase the red pepper flakes or add a tablespoon of sriracha for extra heat.For a citrus twist, try substituting lemon juice with lime or orange juice.Use balsamic vinegar instead of soy sauce for a slightly sweet, tangy variation.
