2 cups green peas (fresh or frozen)
1 small onion, finely chopped
2 cloves garlic, minced
1 medium carrot, diced
1 medium potato, diced
2 tablespoons tomato paste
3 cups beef or chicken broth
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 bay leaf
2 tablespoons fresh parsley, chopped
Heat olive oil in a large pot over medium heat.
Add the meat and brown on all sides, about 5–7 minutes. Remove and set aside if necessary.
In the same pot, add chopped onion and cook until softened. Stir in garlic and cook briefly until fragrant.
