Ingredients

  • 1 pound beef stew meat , cut into bite-sized pieces
  • 2 cups green peas (fresh or frozen)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 medium carrot, diced

  • 1 medium potato, diced

  • 2 tablespoons tomato paste

  • 3 cups beef or chicken broth

  • 2 tablespoons olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika

  • 1 bay leaf

  • 2 tablespoons fresh parsley, chopped

Instructions

  • Heat olive oil in a large pot over medium heat.

  • Add the meat and brown on all sides, about 5–7 minutes. Remove and set aside if necessary.

  • In the same pot, add chopped onion and cook until softened. Stir in garlic and cook briefly until fragrant.

  • Add diced carrot and potato. Cook for 2–3 minutes, stirring occasionally.

  • Stir in tomato paste and cook for 1 minute to deepen the flavor.

  • Return browned meat to the pot.

  • Pour in broth and add bay leaf, salt, pepper, and paprika. Bring to a gentle boil.

  • Reduce heat, cover, and simmer for 35–45 minutes until meat is tender.

  • Add green peas during the last 10–15 minutes of cooking.

  • Remove bay leaf, adjust seasoning if needed, and sprinkle with fresh parsley before serving.

Notes

  • Add peas near the end to preserve their bright color and texture.

  • For a thicker stew, mash a few potato pieces into the broth.

  • Choose well-marbled cuts like beef chuck  for best tenderness.

  • Simmer gently to keep the meat tender and juicy.
