Green Cabbage Cucumber Salad with Herbs is a fresh, crunchy, and healthy side dish made with crisp cabbage, cool cucumbers, and a light lemon dressing. This easy no-cook salad is perfect for meal prep, summer meals, or a refreshing everyday side.

Ingredients

  • 4 cups green cabbage, finely shredded
  • 1 large cucumber, thinly sliced or diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 green onions, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or vinegar
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

Instructions

  • Finely shred the green cabbage and place it in a large bowl.
  • Add cucumber, dill, parsley, and green onions.
  • In a small bowl, whisk together olive oil, lemon juice (or vinegar), salt, and black pepper.
  • Pour the dressing over the salad and toss until well combined.
  • Let the salad sit for 10–15 minutes to allow flavors to meld and cabbage to soften.
