This Greek Salad is a fresh and vibrant Mediterranean dish made with crisp cucumbers, juicy tomatoes, briny olives, creamy feta cheese, and a zesty olive oil dressing. It’s quick to prepare, healthy, and perfect as a side or light main meal.

Ingredients

  • For the Salad:
  • 2 large tomatoes, chopped into chunks
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1/2 cup Kalamata olives (pitted)
  • 1/2 cup feta cheese, cubed or crumbled
  • 1/2 red bell pepper, sliced (optional)
  • 1/4 cup fresh parsley, chopped (optional)

For the Dressing:

  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar (or lemon juice)
  • 1 tsp dried oregano (or fresh)
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Pinch of sugar (optional)

Instructions

  1. Prepare the vegetables: Chop tomatoes, slice cucumber and onion, slice bell pepper (if using), and chop parsley.
  2. Make the dressing: Whisk together olive oil, vinegar or lemon juice, oregano, garlic powder, salt, pepper, and optional sugar until smooth.
  3. Assemble: In a large bowl, combine vegetables, olives, and feta. Pour dressing over and toss gently.
  4. Serve: Garnish with parsley and serve immediately as a side or light main dish.

Notes

Add grilled chicken, lamb, or chickpeas for extra protein.Swap vinegar for lemon juice for a brighter dressing.Try adding avocado cubes or capers for extra flavor.Best enjoyed fresh, but leftovers can be stored in the fridge for 1–2 days.
