This Greek Chicken Marinade is a zesty, herb-packed blend of olive oil, lemon juice, garlic, and spices that transforms chicken into a juicy, flavorful Mediterranean-inspired dish. Perfect for grilling, baking, or pan-searing.

Ingredients

  • 1/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme or 1 tsp fresh chopped herbs (optional)
  • 1 tsp Dijon mustard (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1.5 to 2 pounds chicken breasts, thighs, or drumsticks

Instructions

  1. In a medium bowl or resealable bag, combine olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard (if using), salt, and pepper.
  2. Whisk until well combined or seal the bag and shake gently.
  3. Add the chicken and ensure it is fully coated in the marinade.
  4. Cover the bowl or seal the bag and refrigerate for at least 30 minutes, preferably 2–4 hours.
  5. When ready to cook, remove chicken from the marinade and discard the used marinade.
  6. Grill, bake, or pan-sear the chicken until fully cooked and golden brown (internal temp should reach 165°F/74°C).
  7. Let the chicken rest for 5 minutes before slicing or serving.

Notes

For best results, marinate the chicken for at least 2 hours.Do not reuse marinade that has touched raw chicken unless it’s boiled first.Add red pepper flakes for a spicy twist or fresh herbs for more aroma.You can freeze chicken in the marinade for up to 3 months.Use fresh lemon juice for optimal flavor.
