Greek Chicken Kabobs are flavorful skewers of marinated chicken and fresh vegetables, grilled to perfection. Infused with lemon, garlic, and herbs, they bring the bold and fresh taste of the Mediterranean to your table.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 1 red onion, cut into chunks
  • 2 bell peppers (any color), cut into chunks
  • 1 cup cherry tomatoes or sliced zucchini (optional)
  • Wooden or metal skewers
  • Fresh parsley or dill, chopped (optional, for garnish)
  • Tzatziki sauce (optional, for serving)

Instructions

  1. In a large bowl or zip-top bag, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add chicken cubes to the marinade, toss to coat, and refrigerate for at least 30 minutes or up to 4 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Preheat a grill or grill pan to medium-high heat.
  5. Thread marinated chicken, onion, bell peppers, and optional vegetables onto skewers, alternating ingredients.
  6. Grill kabobs for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
  7. Remove from grill and let rest for a few minutes.
  8. Garnish with fresh herbs and serve with tzatziki sauce if desired.
