Grasshopper Pie is a refreshing, no-bake dessert with a cool minty cream filling in a chocolate cookie crust, topped with chocolate for a light yet indulgent treat.

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 2 tablespoons sugar
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 2 cups whipped cream or whipped topping
  • 1/2 teaspoon mint extract
  • 1 tablespoon crème de menthe (optional)
  • 1/2 cup powdered sugar
  • 23 drops green food coloring (optional)
  • 1/4 cup mini chocolate chips or grated chocolate

Instructions

  1. In a bowl, mix chocolate cookie crumbs, sugar, and melted butter until combined and resembles wet sand.
  2. Press the mixture into the bottom and up the sides of a pie dish. Refrigerate to chill while making the filling.
  3. In another bowl, beat the cream cheese until smooth.
  4. Add mint extract, crème de menthe (if using), and green food coloring. Mix until evenly blended.
  5. Gently fold in whipped cream or whipped topping and powdered sugar until light and creamy.
  6. Pour the filling into the chilled crust and smooth the top.
  7. Sprinkle chocolate chips or grated chocolate on top.
  8. Refrigerate the pie for at least 3–4 hours or overnight until firm.

Use graham cracker crust for a lighter variation.Add a layer of chocolate ganache for a richer dessert.Use peppermint extract if you prefer a stronger mint flavor.Make mini pies using tart pans or cups for individual servings.Chill overnight for best texture and easy slicing.
