Ingredients

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 cup sour cream
1/3 cup fresh grapefruit juice
1 tablespoon grapefruit zest
1 teaspoon vanilla extract

Optional Glaze:
1/2 cup powdered sugar
1–2 tablespoons grapefruit juice

Instructions

  • Preheat oven to 350°F (175°C) and grease a loaf pan or 8-inch round cake pan.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in sour cream, grapefruit juice, zest, and vanilla extract.
  • Gradually fold in the dry ingredients until just combined.
  • Pour batter into the prepared pan and smooth the top.
  • Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • If using glaze, mix powdered sugar with grapefruit juice and drizzle over the cooled cake.
