Ingredients

  • 2 cups gluten-free all-purpose flour (ensure it includes xanthan gum, or add 1 tsp xanthan gum if not included)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 tablespoons olive oil (or vegetable oil)
  • 3/4 cup warm water (more if needed)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare the dough: In a large bowl, whisk together the gluten-free flour, salt, and baking powder. Add the olive oil and mix it into the dry ingredients using your hands or a fork.
  3. Add water: Gradually add warm water, stirring until the dough starts to come together. Add more water, one tablespoon at a time, if the dough feels too dry.
  4. Knead the dough: Knead the dough for 1-2 minutes on a flat surface until it becomes smooth and slightly tacky but not sticky.
  5. Divide and roll: Divide the dough into 8-10 equal portions. Roll each portion into a ball and flatten it with your hands or a rolling pin into thin, round tortillas, about 1/8-inch thick.
  6. Cook the tortillas: Heat a non-stick skillet over medium heat. Cook each tortilla for 1-2 minutes on each side until golden brown spots appear. Repeat with the remaining dough.
  7. Serve: Transfer the cooked tortillas to a plate and cover with a clean towel to keep them warm. Serve immediately or store for later use.

Notes

Storage: Store tortillas in an airtight container at room temperature for up to 2-3 days. For longer storage, freeze them for up to 3 months.
