These Gluten-Free Mini Pizzas are a quick, customizable meal or snack made with your choice of gluten-free crust, favorite toppings, and melty cheese. Baked to golden perfection, they’re fun for kids, great for parties, and perfect for meal prep.

Ingredients

  • 6 mini gluten-free pizza crusts or portions of gluten-free pizza dough
  • 1/2 cup pizza sauce or marinara
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tbsp olive oil (for brushing)
  • 1 tsp dried oregano or Italian seasoning
  • Salt and pepper to taste (optional)
  • Toppings of choice: pepperoni, mushrooms, bell peppers, olives, onions, fresh basil, etc.

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. If using dough, divide and shape into mini crusts. If using pre-made crusts, place them on the baking sheet.
  3. Brush each crust lightly with olive oil.
  4. Spoon pizza sauce over each crust, leaving a small border.
  5. Sprinkle with mozzarella cheese and add your desired toppings.
  6. Season with oregano or Italian seasoning, and salt and pepper if desired.
  7. Bake for 10–15 minutes, or until crust is golden and cheese is melted and bubbly.
  8. Let cool slightly before serving.

Notes

Brush crusts with olive oil before adding sauce to prevent sogginess.Use dairy-free cheese for a vegan version.Freeze baked or unbaked mini pizzas individually and reheat from frozen as needed.Great for kids—let them choose and add their own toppings.Grill instead of baking for a smoky flavor.
