Ingredients

  • 2 cups gluten-free flour blend
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 cup cold butter, cubed
  • 1 cup grated cheddar cheese
  • 2/3 cup milk (or a dairy-free alternative)
  • 1 large egg

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the gluten-free flour, baking powder, salt, and garlic powder (if using).
  3. Add the cold, cubed butter to the flour mixture. Using your fingers or a pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the grated cheddar cheese, ensuring it is evenly distributed.
  5. In a small bowl, whisk together the milk and egg.
  6. Pour the milk and egg mixture into the flour and cheese mixture. Stir gently until the dough just comes together. Avoid over-mixing.
  7. Turn the dough onto a floured surface and gently pat it into a 1-inch thick round. Use a round cutter to cut out the scones or slice the dough into wedges.
  8. Transfer the scones to the prepared baking sheet and brush the tops with a little extra milk or egg wash for a golden finish.
  9. Bake for 12-15 minutes or until the scones are golden and firm to the touch.
  10. Allow the scones to cool slightly before serving.
