Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 cup hot water

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch square baking pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a large bowl, cream together the butter and brown sugar until light and fluffy.
  4. Mix in the molasses and egg until well combined.
  5. Alternately add the dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients.
  6. Stir in the hot water and mix until the batter is smooth and thin.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan before slicing and serving.
