Galettes de Brocoli (Broccoli Fritters) are crispy, golden fritters made with finely chopped broccoli, eggs, breadcrumbs, and seasonings. These healthy, flavorful fritters make a great light lunch, side dish, or snack.

Ingredients

  • 2 cups broccoli florets, steamed or blanched
  • 1 large egg
  • ½ cup breadcrumbs (use gluten-free breadcrumbs for a GF option)
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 teaspoon lemon zest (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Steam or blanch the broccoli florets for 3-4 minutes until tender. Drain well and allow to cool slightly.
  2. Once cooled, chop the broccoli finely or pulse in a food processor until it’s finely chopped but not pureed.
  3. In a large mixing bowl, combine the chopped broccoli, egg, breadcrumbs, Parmesan cheese (if using), garlic, parsley, lemon zest, salt, and pepper. Mix everything together until well combined.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Scoop about 2 tablespoons of the broccoli mixture and shape it into a small patty or galette. Place it gently in the hot skillet.
  6. Cook the galettes for about 3-4 minutes per side, or until golden brown and crispy.
  7. Remove the galettes from the skillet and place them on a paper towel-lined plate to drain excess oil.
  8. Serve immediately, garnished with extra parsley or lemon wedges if desired.

Notes

For different cheese options, you can replace Parmesan with cheddar, feta, or goat cheese.For a spicy kick, add a pinch of red pepper flakes to the mixture.Incorporate grated carrots, zucchini, or sweet potatoes for added nutrients and flavor.
