Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, melted
  • 1 cup semi-sweet chocolate chips or chunks
  • 1 tsp espresso powder (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Mix until smooth.
  3. Add eggs and vanilla extract. Beat until fully incorporated.
  4. In a separate bowl, whisk together cocoa powder, flour, baking powder, salt, and espresso powder if using.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a thick, fudgy dough forms.
  6. Fold in chocolate chips or chunks.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 9–11 minutes, or until the edges are set and the centers look slightly underbaked.
  9. Let the cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
  10. Enjoy warm or store for later.
