Fried Sweet Piroshky are soft Eastern European yeast pastries filled with sweet jam, fruit, or creamy cheese filling and fried until golden brown. These fluffy homemade piroshky have a crisp exterior and tender interior, making them a delicious treat for breakfast, dessert, or tea time.
3 cups all-purpose flour
2 ¼ teaspoons active dry yeast
¾ cup warm milk
¼ cup granulated sugar
3 tablespoons unsalted butter, melted
1 egg
½ teaspoon salt
For the Filling
¾ cup fruit jam or preserves (cherry, strawberry, blueberry, or apricot)
½ cup sweetened farmer’s cheese or cottage cheese (optional)
For Frying & Topping
Vegetable oil for frying
Powdered sugar for dusting
In a small bowl, combine the warm milk, yeast, and a teaspoon of sugar. Let it sit for 5–10 minutes until foamy.
In a large mixing bowl, combine the flour, remaining sugar, and salt. Add the melted butter and egg.
Pour in the activated yeast mixture and mix until a soft dough forms.
Knead the dough for 8–10 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover, and allow it to rise in a warm place for about 1 hour or until doubled in size.
Divide the dough into 12 equal pieces and roll each into a small circle.
Place a spoonful of jam or sweet cheese filling in the center of each circle.
Fold the dough over the filling and pinch the edges tightly to seal, forming an oval or round pastry.
Heat vegetable oil in a deep pan over medium heat.
Carefully place the filled piroshky into the hot oil and fry for 2–3 minutes per side until golden brown.
Remove and place them on paper towels to drain excess oil.
Allow them to cool slightly, then dust with powdered sugar before serving
Make sure the edges are well sealed to prevent filling from leaking during frying.Use thick jam or preserves for the best results.Fresh berries can be mixed with sugar and a little cornstarch for a homemade filling.These pastries are best served warm and freshly fried
