A classic French salad made with freshly grated carrots and a tangy Dijon mustard vinaigrette. It’s light, healthy, and packed with flavor—perfect as a side dish or a refreshing starter.

Ingredients

  • 4 cups carrots, freshly grated (about 45 medium carrots)
  • 1 tablespoon Dijon mustard
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice or white wine vinegar
  • 1/4 teaspoon salt (to taste)
  • 1/8 teaspoon black pepper
  • 1 teaspoon sugar or honey (optional, for balance)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Wash, peel, and finely grate the carrots using a box grater or food processor.
  2. In a small bowl, whisk together the Dijon mustard, olive oil, lemon juice or vinegar, salt, pepper, and sugar or honey if using.
  3. Pour the dressing over the grated carrots and toss until evenly coated.
  4. Let the salad rest for 15–30 minutes to allow the flavors to meld.
  5. Garnish with chopped parsley if desired, and serve chilled or at room temperature.
