Flourless Chocolate Cake is a rich and decadent dessert with a fudgy, truffle-like texture. Naturally gluten-free, this simple yet elegant cake is made with high-quality chocolate and is perfect for special occasions or whenever a chocolate craving strikes.

Ingredients

  • 8 oz dark chocolate (at least 60% cocoa), chopped or chips
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsweetened cocoa powder (plus more for dusting)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • Optional toppings: powdered sugar, fresh berries, whipped cream, or ice cream

Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a double boiler or microwave-safe bowl, melt the chocolate and butter together, stirring until smooth.
  3. Remove from heat and stir in granulated sugar.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in cocoa powder, vanilla extract, and salt until batter is fully combined and smooth.
  6. Pour batter into prepared cake pan and smooth the top.
  7. Bake for 20–25 minutes, or until the edges are set and the center has a slight jiggle.
  8. Let cake cool in the pan for 10–15 minutes, then run a knife around the edge and invert onto a plate.
  9. Cool completely before dusting with cocoa powder or powdered sugar. Serve with your favorite toppings.
