This Easy Shrimp Scampi is a quick and flavorful dish made with tender shrimp tossed in a garlic, butter, and lemon sauce. Ready in just 20 minutes, it’s perfect for busy weeknights or special occasions. Serve it over pasta, rice, or with crusty bread to soak up the delicious sauce.

Ingredients

  • For the Shrimp Scampi:
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • Juice of 1 lemon
  • 1/4 cup dry white wine (or chicken broth)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper, to taste
  • Zest of 1 lemon (optional)

For Serving:

  • Cooked pasta (spaghetti, linguine, or your favorite)
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook pasta (if using): Prepare according to package directions. Drain and set aside, reserving some pasta water.
  2. Sauté shrimp: In a skillet, heat olive oil and 2 tbsp butter. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and cooked through. Remove and set aside.
  3. Make the sauce: Melt remaining 2 tbsp butter in the skillet. Add garlic and red pepper flakes, sauté 1–2 minutes. Stir in wine (or broth) and lemon juice, simmer 2–3 minutes until slightly reduced.
  4. Combine: Return shrimp to skillet, toss to coat. Stir in parsley and lemon zest. If serving with pasta, toss pasta into the skillet, adding a splash of pasta water if needed.
  5. Serve: Plate shrimp scampi hot with lemon wedges and Parmesan, if desired.
