These easy oatmeal cookies are soft, chewy, and full of warm, comforting flavor. With no chilling required and simple pantry ingredients, they’re quick to make and perfect for any time of day.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • Optional: 1 cup raisins, chocolate chips, or chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream together butter, brown sugar, and granulated sugar in a large mixing bowl until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Fold in oats and any optional mix-ins like raisins, chocolate chips, or nuts.
  7. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 10–12 minutes or until edges are golden and centers are just set.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use old-fashioned oats for the best chewy texture.No need to chill the dough, but you can for thicker cookies.Customize with your favorite mix-ins like coconut, nuts, or dried fruit.Store with a slice of bread in the container to keep cookies soft.Freeze cookie dough balls for a quick treat later.
