Lemon cream cheese bars are a sweet, tangy dessert featuring a buttery crust and a rich, lemony cheesecake-style filling. These bars are creamy, refreshing, and perfect for any occasion, from spring brunches to cozy desserts.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1/3 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper and lightly grease it.
  2. In a medium bowl, mix flour, granulated sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press the crust mixture evenly into the bottom of the prepared pan.
  4. Bake crust for 15–18 minutes, or until lightly golden. Remove and let cool slightly.
  5. In another bowl, beat cream cheese until smooth. Add eggs, lemon juice, lemon zest, and vanilla extract. Beat until creamy and well combined.
  6. Pour the filling over the cooled crust and smooth the top.
  7. Bake for 20–25 minutes, or until the center is just set and no longer jiggly.
  8. Cool completely at room temperature, then refrigerate for at least 2 hours or overnight.
  9. Dust with powdered sugar before slicing and serving, if desired.
