Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp melted butter
  • 1 can (14 oz) sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup key lime juice (fresh or bottled)
  • 1 tsp lime zest (optional)
  • Whipped cream (for topping, optional)
  • Lime slices or additional zest for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until it resembles wet sand.
  3. Press the mixture into the bottom and sides of a 9-inch pie dish to form the crust.
  4. Bake the crust for 8–10 minutes, then let it cool slightly.
  5. In a separate bowl, whisk together sweetened condensed milk, egg yolks, key lime juice, and lime zest (if using) until smooth and fully combined.
  6. Pour the filling into the cooled crust and spread evenly.
  7. Bake for 15–17 minutes, or until the center is just set with a slight jiggle.
  8. Remove from oven and let cool at room temperature for 30 minutes.
  9. Refrigerate for at least 3 hours or overnight until fully chilled.
  10. Top with whipped cream and garnish with lime slices or zest before serving, if desired.
