Ingredients

  • 1 lb ground turkey
  • 8 oz pasta (penne, spaghetti, or your favorite type)
  • 1 head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional, for a little heat)
  • 1/2 cup low-sodium chicken broth (or vegetable broth)
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. In the last 3-4 minutes of cooking, add the broccoli florets to the pot with the pasta. This will allow the broccoli to cook and soften while the pasta finishes. Drain the pasta and broccoli, reserving about 1/2 cup of pasta cooking water. Set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the ground turkey to the skillet, breaking it apart with a spoon or spatula. Cook for 6-8 minutes, or until the turkey is fully cooked and browned. Season with salt, pepper, Italian seasoning, and red pepper flakes (if using).
  3. Once the turkey is cooked, add the cooked pasta and broccoli to the skillet. Pour in the chicken broth and stir everything together. Let it cook for another 2-3 minutes, allowing the flavors to combine and the pasta to absorb some of the broth.
  4. If you like, stir in the grated Parmesan cheese for added flavor and creaminess. Adjust seasoning with more salt, pepper, or red pepper flakes as needed.
  5. Serve the pasta in bowls, garnished with fresh parsley and extra Parmesan cheese if desired. Enjoy!
