Corn salsa is a fresh, vibrant dip or topping made with sweet corn, peppers, onion, cilantro, and lime juice. It’s tangy, slightly spicy, and versatile enough for tacos, chips, or grilled dishes.

Ingredients

  • 3 cups corn (fresh, frozen, or canned)
  • 1/2 cup red onion, finely chopped
  • 1 jalapeño, finely chopped (remove seeds for less heat)
  • 1 red bell pepper, diced
  • 1/3 cup fresh cilantro, chopped
  • 3 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1 avocado, diced
  • Optional: 1/2 cup diced tomatoes or green onions

Instructions

  1. If using fresh corn, grill or boil until tender, then cut kernels off the cob. If using frozen, thaw fully; if canned, drain and rinse well.
  2. In a large mixing bowl, combine corn, red onion, jalapeño, red bell pepper, and cilantro.
  3. Drizzle with lime juice and olive oil. Add salt and black pepper.
  4. Mix well until evenly combined. Adjust seasoning to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving for best flavor.

Grilled or roasted corn adds a smoky depth of flavor.For extra creaminess, add diced avocado just before serving.Stir in black beans or mango for fun variations.Best enjoyed chilled as a dip, topping, or side dish.Store in the refrigerator up to 3 days; not freezer-friendly.
