Chicken Taquitos are crispy, cheesy rolled tortillas filled with seasoned shredded chicken and baked or fried to golden perfection. Easy to prepare and endlessly versatile, they’re perfect for dipping, snacking, or serving as a fun meal.

Ingredients

  • 2 cups cooked shredded chicken (rotisserie or homemade)
  • 4 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar, Monterey Jack, or blend)
  • 1/4 cup salsa or canned green chiles
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • 12 small corn or flour tortillas
  • Cooking spray or oil (for baking or frying)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large mixing bowl, combine shredded chicken, cream cheese, shredded cheese, salsa or green chiles, garlic powder, onion powder, cumin, salt, and pepper. Mix until well combined.
  3. Warm tortillas briefly in the microwave or on a skillet to make them pliable.
  4. Place about 2 tablespoons of the chicken mixture near the edge of each tortilla. Roll tightly and place seam-side down on the baking sheet.
  5. Lightly spray or brush the tops with oil.
  6. Bake for 15–20 minutes, or until golden and crispy. Alternatively, fry in hot oil for 5–7 minutes until golden and crisp.
  7. Let cool slightly before serving. Serve with salsa, guacamole, or sour cream.
