Ingredients

For the salad:

  • 1 cup wheat berries
  • ½ cup dried cherries
  • 2 celery stalks, chopped
  • ¼ cup red onion, finely diced
  • 1 carrot, shredded
  • ¼ cup fresh parsley, chopped
  • ½ cup toasted walnuts or pecans

For the dressing:

  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Cook wheat berries according to package instructions until tender but chewy (about 35–40 minutes). Drain and let cool completely.
  2. In a large bowl, combine cooled wheat berries, dried cherries, celery, red onion, carrot, parsley, and toasted nuts.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper.
  4. Pour dressing over the salad and toss well to coat evenly.
