Easy Canned Salmon Patties are a quick, budget-friendly meal made with pantry staples. Crispy on the outside and tender inside, they’re flavored with herbs, lemon, and spices, making them perfect for lunch, dinner, or meal prep.

Ingredients

  • 2 cans (6–7 oz each) canned salmon, drained
  • 2 eggs
  • 1/2 cup breadcrumbs or crushed crackers
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley or dill (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil or neutral oil for frying

Instructions

  1. Drain canned salmon and remove bones and skin if desired.
  2. In a large bowl, combine salmon, eggs, breadcrumbs, onion, garlic, mustard, lemon juice, herbs, salt, and pepper.
  3. Mix until fully combined and mixture holds together.
  4. Form into 6 small patties, about 2–3 inches wide.
  5. Heat oil in a skillet over medium heat.
  6. Cook patties in batches for 3–4 minutes per side until golden brown and heated through.
  7. Transfer to a paper towel-lined plate to drain excess oil.
  8. Serve warm with lemon wedges, sauce, or your choice of sides.

  • Use gluten-free breadcrumbs for a gluten-free version.
  • Add grated vegetables like zucchini or carrots for extra nutrition.
  • Mixture can be made ahead and refrigerated for up to a day before cooking.
