Ingredients

  • 8 oz elbow macaroni or any small pasta

  • 1 cup dill pickles, chopped (plus some pickle juice)

  • 1 cup celery, diced

  • 1 small red onion, finely chopped

  • 1 cup mayonnaise

  • 2 tablespoons Dijon mustard

  • 1 tablespoon pickle juice (from the jar of pickles)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Fresh dill (optional, for garnish)

Instructions

  • Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Once cooked, drain and rinse the pasta under cold water to cool it down. Set aside.

  • Prepare the vegetables and pickles: While the pasta cools, chop the dill pickles, dice the celery, and finely chop the red onion.

  • Make the dressing: In a medium bowl, whisk together mayonnaise, Dijon mustard, pickle juice, garlic powder, onion powder, salt, and black pepper until smooth and well combined.

  • Assemble the salad: In a large bowl, combine the cooled pasta, chopped dill pickles, diced celery, and red onion. Pour the dressing over the mixture and stir gently to combine.

  • Chill the salad: Cover the bowl with plastic wrap and refrigerate the pasta salad for at least 1 hour before serving. This allows the flavors to meld and gives the salad time to chill.

  • Serve: Before serving, give the salad a quick stir and garnish with fresh dill if desired. Serve chilled and enjoy!

Notes

For a tangier version, adjust the amount of pickle juice in the dressing. To make it spicier, add diced jalapeños, cayenne pepper, or a dash of hot sauce to the dressing. For a lighter version, substitute the mayonnaise with Greek yogurt or sour cream. You can add other veggies like bell peppers or peas for more texture.
