This Spaghetti Salad is a fresh and colorful pasta salad loaded with crisp vegetables and tossed in zesty Italian dressing. Served cold, this easy spaghetti pasta salad is perfect for picnics, potlucks, barbecues, and make-ahead side dishes.

Ingredients

  • 12 oz spaghetti

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • ¼ cup red onion, finely chopped

  • 1 cup bell peppers, diced

  • ½ cup black olives, sliced

  • 1 cup Italian dressing

  • ¼ cup parmesan cheese, grated

  • 2 tablespoons fresh parsley, chopped

  • Salt, to taste

  • Black pepper, to taste

Instructions

  • Cook the spaghetti according to package instructions until al dente.

  • Drain the pasta and rinse under cold water until completely cooled.

  • Cut the cooled spaghetti into shorter pieces if desired for easier serving.

  • In a large bowl, combine the spaghetti, cherry tomatoes, cucumber, red onion, bell peppers, and black olives.

  • Pour the Italian dressing over the salad and toss until evenly coated.

  • Add the grated parmesan cheese and chopped parsley, then gently mix.

  • Season with salt and black pepper to taste.

  • Cover and refrigerate for at least 1 hour to allow the flavors to blend.

  • Toss again before serving and add extra dressing if needed.

Notes
