This Spaghetti Salad is a fresh and colorful pasta salad loaded with crisp vegetables and tossed in zesty Italian dressing. Served cold, this easy spaghetti pasta salad is perfect for picnics, potlucks, barbecues, and make-ahead side dishes.
12 oz spaghetti
1 cup cherry tomatoes, halved
1 cup cucumber, diced
¼ cup red onion, finely chopped
1 cup bell peppers, diced
½ cup black olives, sliced
1 cup Italian dressing
¼ cup parmesan cheese, grated
2 tablespoons fresh parsley, chopped
Salt, to taste
Cook the spaghetti according to package instructions until al dente.
Drain the pasta and rinse under cold water until completely cooled.
Cut the cooled spaghetti into shorter pieces if desired for easier serving.
In a large bowl, combine the spaghetti, cherry tomatoes, cucumber, red onion, bell peppers, and black olives.
Pour the Italian dressing over the salad and toss until evenly coated.
Add the grated parmesan cheese and chopped parsley, then gently mix.
Season with salt and black pepper to taste.
Cover and refrigerate for at least 1 hour to allow the flavors to blend.
Toss again before serving and add extra dressing if needed.
