Crumb-Topped Cherry Pie Bars are a simple and delicious dessert that combines the sweet-tart flavor of cherry pie with a buttery crust and crumble topping. Perfect for gatherings or make-ahead treats, they’re easy to slice, serve, and share.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract (optional)
  • 1 (21 oz) can cherry pie filling (or 2 cups homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Cut in cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  4. Stir in eggs, vanilla extract, and almond extract (if using) until the dough begins to come together. It will be crumbly but should hold when pressed.
  5. Press about two-thirds of the dough evenly into the bottom of the prepared pan to form the crust.
  6. Spread the cherry pie filling evenly over the crust layer.
  7. Crumble the remaining dough over the cherry filling.
  8. Bake for 35–40 minutes, or until the top is golden and the filling is bubbling.
  9. Allow bars to cool completely in the pan before slicing into squares.
