Crockpot Parmesan Garlic Chicken Pasta is an easy, creamy comfort food combining tender chicken, savory garlic, and rich Parmesan cheese. This one-pot meal is perfect for busy nights and packed with flavor.

Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 package (8 oz) cream cheese (softened)
  • 1/2 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 8 oz pasta (penne, rotini, or your preferred pasta)
  • Fresh parsley or basil (optional, for garnish)

Instructions

  1. Place chicken breasts in the bottom of your crockpot (can use frozen chicken, increase cooking time by 30-60 minutes if using frozen).
  2. In a bowl, mix cream cheese, Parmesan, chicken broth, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir until smooth.
  3. Pour the creamy mixture over the chicken. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender.
  4. Shred the chicken with two forks and return it to the crockpot, mixing it into the sauce.
  5. Cook pasta according to package instructions, drain, and set aside.
  6. Add cooked pasta to the crockpot and stir until well coated in the creamy sauce.
  7. Pour in heavy cream and stir to combine. Cook for an additional 10-15 minutes on low to let the pasta absorb the sauce and thicken.
  8. Garnish with fresh parsley or basil if desired and serve hot.

Notes

For a spicier version, add a pinch of red pepper flakes or a splash of hot sauce to the sauce.Use chicken thighs for a juicier, richer dish.For a lighter version, you can use half-and-half or milk instead of heavy cream.
