Crockpot Huli Huli Chicken is a sweet and savory Hawaiian-inspired slow cooker dish made with tender chicken simmered in a pineapple-soy sauce. It’s juicy, flavorful, and perfect for an easy hands-off dinner.

Ingredients

  • 2 lbs boneless skinless chicken thighs or breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar, packed
  • 1/4 cup ketchup
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
  • 1/4 cup chicken broth or water
  • 2 tbsp cornstarch (optional, for thickening)
  • 2 tbsp water (for cornstarch slurry, optional)
  • 2 green onions, sliced (optional, for garnish)

Instructions

  1. Place the chicken in the bottom of the crockpot.
  2. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, ginger, and chicken broth or water.
  3. Pour the sauce evenly over the chicken.
  4. Cover and cook on low for 4–5 hours or on high for 2–3 hours, until the chicken is tender and fully cooked.
  5. Remove the chicken and shred or slice if desired.
  6. If a thicker sauce is preferred, whisk cornstarch with water and stir into the sauce in the crockpot.
  7. Return the chicken to the crockpot and cook for an additional 15–20 minutes until the sauce thickens slightly.
  8. Serve hot, garnished with green onions if desired.
