Creamy Tuscan Salmon is a rich, elegant dish featuring pan-seared salmon fillets in a velvety garlic-Parmesan cream sauce with sun-dried tomatoes and spinach. It’s restaurant-quality comfort food made easily at home in under 30 minutes.

Ingredients

  • 4 salmon fillets (skin-on or skinless)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes (in oil), sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp Italian seasoning
  • Optional: 1/4 tsp red pepper flakes
  • Optional: 1 tbsp lemon juice or zest
  • Fresh parsley or basil, for garnish

Instructions

  1. Pat salmon fillets dry and season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear salmon for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, reduce heat to medium and add butter and garlic. Sauté for about 30 seconds until fragrant.
  4. Add sun-dried tomatoes and cook for 1–2 minutes.
  5. Pour in heavy cream and bring to a gentle simmer.
  6. Stir in Parmesan cheese and cook until melted and smooth.
  7. Add spinach and cook until wilted.
  8. Return salmon to the skillet and spoon sauce over fillets. Simmer for 2–3 minutes to heat through.
  9. Optional: Add a squeeze of lemon juice for brightness.
  10. Garnish with fresh parsley or basil and serve warm.

Notes

Use skin-on salmon for extra flavor and crispy texture, but skinless also works well.Keep the heat low after adding cream to prevent curdling.For added richness, stir in a spoonful of cream cheese.Serve with pasta, rice, mashed potatoes, or crusty bread to soak up the sauce.Use kale or Swiss chard in place of spinach if desired.
