Creamy raspberry fluff is a quick, no-bake dessert salad made with raspberry gelatin, pudding mix, pineapple, whipped topping, and raspberries. It’s light, fruity, and perfect for potlucks, holidays, or anytime you need a sweet, chilled treat.

Ingredients

  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 (3 oz) package raspberry gelatin (Jell-O)
  • 1 (20 oz) can crushed pineapple (with juice)
  • 1 (8 oz) container whipped topping (like Cool Whip), thawed
  • 1 1/2 cups frozen raspberries (or fresh)
  • 1 cup mini marshmallows (optional)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. In a large mixing bowl, stir together the dry raspberry gelatin and vanilla pudding mix.
  2. Add the entire can of crushed pineapple with juice and stir until fully combined.
  3. Fold in the whipped topping until the mixture is smooth and creamy.
  4. Gently fold in the raspberries, being careful not to break them up too much.
  5. Stir in mini marshmallows and chopped nuts if using.
  6. Cover and refrigerate for at least 1 hour to allow the fluff to set and flavors to blend.
  7. Serve chilled, topped with additional fruit or whipped topping if desired.

Notes

Use sugar-free pudding and gelatin for a lighter version.

Fresh raspberries can be used to reduce extra liquid.Add cream cheese for a thicker, tangier fluff.Do not drain the pineapple—the juice is needed for the texture.Serve in bowls, cups, or a trifle dish for presentation.
