Ingredients

  • 2 cups fresh or frozen raspberries (thawed and drained if frozen)
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice (optional)
  • 2 cups whipped topping (such as Cool Whip)
  • 1 cup mini marshmallows (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. If using frozen raspberries, thaw and drain any excess juice.
  2. In a large bowl, beat the cream cheese until smooth.
  3. Add powdered sugar, vanilla extract, and lemon juice (if using), and beat until creamy.
  4. Gently fold in the whipped topping until well combined and fluffy.
  5. Carefully fold in the raspberries, being gentle to avoid crushing them too much.
  6. Stir in mini marshmallows and chopped nuts if desired.
  7. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld and the texture to firm up.
