4 salmon fillets (about 6 oz each)
2 tablespoons olive oil (for searing the salmon)
1 tablespoon butter (for the sauce)
4 cloves garlic, minced
1/2 cup heavy cream
1/4 cup chicken broth (or white wine for extra flavor)
1 teaspoon Dijon mustard (optional, for a slight tang)
1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
1 teaspoon dried oregano (or 1 tablespoon fresh oregano)
1 tablespoon lemon juice
1/4 cup grated Parmesan cheese (optional, for richness)
Salt and pepper, to taste
Cook the salmon:
Heat olive oil in a large skillet over medium-high heat.
Season the salmon fillets with salt and pepper on both sides.
Once the skillet is hot, add the salmon (skin-side down if applicable) and cook for 4-5 minutes per side, until the salmon flakes easily and reaches an internal temperature of 145°F (63°C). Remove the salmon and set it aside.
Make the creamy garlic sauce:
In the same skillet, melt butter and sauté the minced garlic for 1-2 minutes, until fragrant.
Add chicken broth (or white wine) and stir to deglaze the skillet, scraping up any flavorful bits from the pan.
Stir in the heavy cream, Dijon mustard (if using), thyme, oregano, and lemon juice. Let the sauce simmer for 3-4 minutes to thicken slightly.
Add Parmesan (optional):
Stir in the grated Parmesan cheese, if using, and cook for an additional minute until the sauce becomes rich and creamy. Adjust seasoning with salt, pepper, and extra lemon juice to taste.
Combine the salmon with the sauce:
Gently return the cooked salmon fillets to the skillet, spooning some of the creamy sauce over the top. Let the salmon sit in the sauce for 2-3 minutes to warm through and meld the flavors.
Serve:
Transfer the salmon to serving plates, spooning more creamy herb sauce over the top. Garnish with chopped fresh parsley and an extra squeeze of lemon juice for added brightness.
Experiment with different herbs like dill, basil, or tarragon for a unique twist. For a spicier version, add a pinch of red pepper flakes to the sauce.Serve with steamed vegetables, cauliflower rice, or roasted potatoes for a low-carb option. You can also add spinach, mushrooms, or sun-dried tomatoes to the sauce for added texture and flavor.
