Creamy Dijon Mustard Chicken is a rich and flavorful one-skillet dish featuring pan-seared chicken smothered in a silky Dijon mustard cream sauce. It’s a perfect balance of tangy and savory, ideal for both weeknight dinners and special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or butter
  • 2 garlic cloves, minced
  • 1 shallot or small onion, finely chopped
  • 1/2 cup chicken broth
  • 2 tbsp Dijon mustard
  • 1/2 cup heavy cream
  • 1 tbsp whole grain mustard (optional)
  • 1 tsp fresh thyme or chopped parsley (for garnish)
  • Optional: 1/4 cup dry white wine, 1 tsp lemon juice, or 2 tbsp grated Parmesan cheese

Instructions

  1. Season the chicken on both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden and cooked through. Remove and set aside.
  3. Reduce heat to medium. Add shallot and garlic to the same pan and sauté until softened, about 2–3 minutes.
  4. Deglaze the pan with chicken broth and optional white wine, scraping up any browned bits. Simmer for 2–3 minutes.
  5. Whisk in Dijon mustard and heavy cream. Add whole grain mustard if using, and stir until sauce is smooth.
  6. Return the chicken to the pan and spoon sauce over the top. Simmer for 5–7 minutes until heated through and the sauce slightly thickens.
  7. Taste and adjust seasoning. Stir in lemon juice or Parmesan, if desired.
  8. Garnish with fresh thyme or parsley. Serve warm with your favorite sides.
