Creamy Cucumber Salad is a light, refreshing dish made with crisp cucumber slices and a rich, tangy dressing. This easy-to-make recipe combines sour cream, dill, and a touch of vinegar for a creamy, flavorful salad that’s perfect for summer gatherings, BBQs, or a healthy side dish to any meal.

Ingredients

For the Salad:

  • 2 large cucumbers (English cucumbers work best, but any variety will do)

  • ½ small red onion, thinly sliced (optional)

  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)

  • 1 tablespoon fresh parsley (optional, for garnish)

For the Dressing:

  • ½ cup sour cream

  • ¼ cup mayonnaise

  • 1 tablespoon white vinegar (or apple cider vinegar)

  • 1 teaspoon sugar (optional, for a touch of sweetness)

  • 1 garlic clove, minced

  • Salt and pepper to taste

Instructions

  • Preparing the Cucumbers:

    • Wash and slice the cucumbers thinly. You can peel them if you prefer, but leaving the peel adds color and extra nutrients.

    • For extra crispness, lightly sprinkle the cucumber slices with salt and let them sit in a colander for about 15 minutes to draw out excess water. This step is optional.

    • (Optional) Thinly slice the red onion and add it to the cucumbers for extra crunch and sharpness.

  • Making the Dressing:

    • In a medium bowl, combine sour cream, mayonnaise, white vinegar, sugar (if using), minced garlic, salt, and pepper. Whisk until smooth and well combined. Taste and adjust seasoning as needed.

  • Assembling the Salad:

    • Add the sliced cucumbers and red onion (if using) to a large bowl. Pour the creamy dressing over the top and gently toss to coat evenly.

    • Stir in fresh dill and parsley for extra flavor. Garnish with additional herbs if desired.

  • Serving:

    • Serve immediately, or chill the salad in the refrigerator for about 30 minutes to allow the flavors to meld.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 1-2 days. The cucumbers may release some water over time, but the salad will still be delicious.Make-Ahead: The salad can be prepared ahead of time, up to 4 hours in advance. Just give it a gentle stir before serving.Customizations: Add avocado for extra creaminess or cherry tomatoes for a burst of color and flavor.
