Ingredients

  • ½ cup sour cream or Greek yogurt
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 2 cloves garlic, minced

  • 1 tbsp olive oil
  • ½ cup chicken broth
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp paprika
  • 2 tbsp fresh parsley, chopped

Instructions

  • Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  • Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft and fragrant.
  • Add chicken (if using raw) and cook until no longer pink.
  • Stir in cauliflower rice and cook for 3–5 minutes to remove excess moisture.
  • Add cream cheese, sour cream (or Greek yogurt), and chicken broth. Stir until smooth and creamy.
  • Season with salt, pepper, and paprika.
  • Transfer the mixture to the prepared baking dish.
  • Top with shredded cheddar cheese.
  • Bake uncovered for 20–25 minutes until bubbly and lightly golden.
  • Remove from oven, let cool slightly, garnish with parsley, and serve.
