Ingredients

For the Pasta:

  • 2 tablespoons olive oil

  • 4 boneless, skinless chicken breasts (sliced into strips or cubes)

  • Salt and pepper to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 2 cups mushrooms (sliced, button or cremini work best)

  • 3 cloves garlic (minced)

  • 1 cup chicken broth

  • 1 1/2 cups heavy cream

  • 1/4 cup grated Parmesan cheese

  • 1 tablespoon fresh parsley (chopped, for garnish)

  • 12 oz pasta (penne, fettuccine, or spaghetti work well)

  • 1 tablespoon butter (optional, for extra richness)

Instructions

  • Cook the Pasta:
    Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain, reserving about 1/2 cup of pasta water, and set aside.

  • Cook the Chicken:
    While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
    Season the chicken with salt, pepper, garlic powder, and onion powder.
    Add the chicken to the skillet and cook for 5-7 minutes, or until browned and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside.

  • Sauté the Mushrooms and Garlic:
    In the same skillet, add sliced mushrooms and cook for 4-5 minutes until they release moisture and brown.
    Add the minced garlic and cook for 1 minute, until fragrant.

  • Make the Creamy Sauce:
    Pour in the chicken broth, bringing it to a simmer. Let it cook for 2-3 minutes to reduce slightly.
    Lower the heat, then add the heavy cream, stirring to combine. Let the sauce simmer for 4-5 minutes until it thickens.
    Stir in Parmesan cheese and butter (if using) until the sauce is smooth. Taste and adjust seasoning with salt and pepper.

  • Combine Pasta, Chicken, and Sauce:
    Return the cooked chicken to the skillet. Add the cooked pasta and toss to combine, ensuring the pasta is evenly coated in the creamy sauce. If the sauce is too thick, add a bit of reserved pasta water to loosen it up.
    Continue to cook for another 2-3 minutes to allow flavors to combine.

  • Serve:
    Garnish with fresh parsley and additional grated Parmesan cheese, if desired.
    Serve the creamy chicken and mushroom pasta hot, with a side of garlic bread or a green salad
