Creamy Cajun chicken pasta is a bold and comforting dish featuring tender, spiced chicken tossed in a rich, creamy Cajun sauce with sautéed vegetables and pasta. It’s a one-pan meal packed with flavor, perfect for weeknights or entertaining.

Ingredients

  • 2 boneless, skinless chicken breasts or thighs, sliced
  • 12 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 34 garlic cloves, minced
  • 1 bell pepper, sliced (any color)
  • 1 small onion, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 8 ounces pasta (penne, fettuccine, or similar)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Slice the chicken and toss with Cajun seasoning until evenly coated.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5–6 minutes until golden and cooked through. Remove and set aside.
  4. In the same skillet, melt the butter. Add bell pepper and onion and sauté for 3–4 minutes until softened.
  5. Add garlic and cook for another 30 seconds.
  6. Pour in the chicken broth and scrape up any browned bits from the pan.
  7. Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese, simmering for 3–5 minutes until the sauce thickens.
  8. Return the chicken to the skillet and add the cooked pasta. Toss to coat evenly.
  9. Season with salt and black pepper to taste. Garnish with fresh parsley if desired.
  10. Serve hot and enjoy!

Notes

Adjust the spice level by using more or less Cajun seasoning or adding cayenne pepper.Substitute shrimp for chicken or use both for a surf-and-turf variation.Use milk or half-and-half for a lighter version, though the sauce may be thinner.To prevent the cream from curdling, simmer gently and avoid high heat once dairy is added.
