1 lb fresh crab meat (or canned crab meat or imitation crab)
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1 teaspoon Old Bay seasoning (or any seafood seasoning)
1 tablespoon fresh parsley, chopped (plus extra for garnish)
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/4 cup cucumber, finely chopped (optional)
Salt and pepper, to taste
Prepare the crab meat: Gently pick through fresh crab meat to remove any shell bits, or chop canned or imitation crab into bite-sized pieces.
Make the dressing: In a large mixing bowl, whisk together mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, and parsley until smooth and well combined.
Combine the ingredients: Add crab meat, chopped celery, red onion, and cucumber (if using) to the bowl with the dressing. Gently fold together, keeping the crab chunks intact for the best texture.
Season and adjust: Taste and adjust with salt, pepper, and extra lemon juice or Old Bay seasoning as desired.
Serve: Chill the salad before serving. Enjoy it on a bed of lettuce, in a sandwich, wrap, or with crackers. Garnish with extra fresh parsley if desired.
Enjoy: Serve chilled and enjoy the refreshing and creamy crab salad.
Variations: Add diced avocado for extra creaminess, or a dash of hot sauce for a spicy kick. You can also add bell peppers, shredded carrots, or toasted almonds for added crunch.Storage/Reheating: Leftovers can be stored in the fridge for up to 2 days. The salad is best served chilled.
