Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies (or regular diced tomatoes)
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional, for sprinkling)
  • 1 box (8.5 oz) cornbread mix (like Jiffy)
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup melted butter
  • 1/2 cup shredded cheddar cheese (optional, for extra cheese)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch casserole dish with cooking spray or butter.
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat, then add the diced onion and cook for 2-3 minutes until softened.
  3. Stir in the garlic powder, chili powder, cumin, salt, and pepper. Add the black beans, kidney beans, corn, and diced tomatoes with green chilies. Simmer for 5-7 minutes to combine the flavors.
  4. If using, sprinkle 1 cup of shredded cheddar cheese over the mixture, then stir until melted. Remove from heat and set aside.
  5. In a medium bowl, prepare the cornbread mix according to the package directions, adding milk, egg, and melted butter. Stir in 1/2 cup shredded cheddar cheese for an extra cheesy topping.
  6. Spread the beef and bean mixture into the prepared casserole dish. Pour the cornbread batter evenly over the top.
  7. Bake for 25-30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the cornbread comes out clean.
  8. Allow the casserole to cool for a few minutes before serving. Garnish with sour cream, guacamole, or a simple salad if desired.
