Ingredients

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon cinnamon (optional, for extra flavor)

  • 1 cup cottage cheese (low-fat or full-fat, depending on preference)
  • 1/2 cup chopped fresh cilantro (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, cinnamon (if using), salt, and pepper. Spread them in an even layer on a baking sheet and roast for 25-30 minutes, or until the potatoes are tender and slightly crispy on the edges, stirring halfway through.
  2. While the sweet potatoes are roasting, heat olive oil in a large skillet over medium heat. Add the ground beef and season with garlic powder, onion powder, cumin, paprika, salt, and pepper. Cook for 6-8 minutes, breaking up the beef with a spatula, until it’s browned and cooked through.
  3. Once the sweet potatoes are done roasting, divide them into bowls. Top each bowl with a portion of the cooked beef and a scoop of cottage cheese.
  4. Garnish with fresh cilantro, sliced avocado, and a squeeze of lime juice for extra flavor. Serve immediately and enjoy!
