Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 teaspoon garlic powder, divided
  • 1/2 teaspoon smoked paprika (or regular paprika)
  • 1/2 teaspoon onion powder
  • 1 cup cottage cheese
  • Fresh parsley or green onions, chopped (optional)
  • Optional toppings: sliced avocado, hot sauce, lime wedges

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss cubed sweet potatoes with olive oil, 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp garlic powder, and paprika until evenly coated.
  3. Spread on a baking sheet in a single layer and roast for 20–25 minutes, flipping halfway through, until tender and caramelized.
  4. While sweet potatoes roast, heat a skillet over medium heat. Add ground beef and cook until browned and fully cooked, breaking it up with a spoon.
  5. Season beef with remaining salt, pepper, garlic powder, and onion powder. Stir to combine.
  6. Divide roasted sweet potatoes and cooked beef into serving bowls.
  7. Top each bowl with a generous scoop of cottage cheese.
  8. Add optional toppings such as avocado, herbs, hot sauce, or a squeeze of lime.
