Coronation Chicken Salad is a classic British recipe featuring tender chicken in a creamy curry dressing with a touch of sweetness. This easy and flavorful chicken salad is perfect for sandwiches, wraps, or light lunches.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain yogurt or crème fraîche
  • 12 teaspoons curry powder (adjust to taste)
  • 2 tablespoons mango chutney or apricot jam
  • 1 tablespoon lemon juice
  • 1/4 cup red onion, finely chopped
  • 1/4 cup raisins or sultanas
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup toasted almonds (optional)
  • 1 tablespoon fresh cilantro or parsley, chopped (optional)

Instructions

  • In a large bowl, mix together mayonnaise, yogurt (or crème fraîche), curry powder, and mango chutney until smooth.
  • Add lemon juice and stir to combine.
  • Mix in chopped red onion and raisins or sultanas.
  • Add the cooked chicken and gently stir until well coated.
  • Season with salt and black pepper to taste.
  • Fold in toasted almonds and fresh herbs if using.
  • Cover and chill in the refrigerator for at least 30 minutes before serving.
  • Serve cold in sandwiches, wraps, or over salad greens
