Corn Fritters are crispy on the outside, tender on the inside, and packed with sweet corn flavor. They’re quick, versatile, and perfect as a snack, appetizer, or side dish.

Ingredients

  • 1 cup fresh, canned, or frozen corn kernels (drained if canned, thawed if frozen)
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1/4 cup milk (or buttermilk)
  • 2 tbsp chopped green onions or chives (optional)
  • Oil for frying (vegetable, canola, or sunflower)

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and pepper.
  2. In a separate bowl, beat the eggs and milk until smooth.
  3. Add the wet ingredients to the dry mixture and stir until just combined.
  4. Fold in the corn kernels and green onions if using.
  5. Heat about 1/4 inch of oil in a skillet over medium-high heat.
  6. Drop spoonfuls of batter into the hot oil, flattening slightly with the back of a spoon.
  7. Fry for 2–3 minutes per side, until golden brown and crisp.
  8. Transfer to a paper towel-lined plate to drain. Serve warm with sour cream, salsa, or honey.

Notes

Add shredded cheddar or mozzarella for cheesy fritters.Mix in chopped jalapeños for a spicy version.Use buttermilk for extra tangy flavor.Fresh herbs like parsley or cilantro add freshness.Turn them sweet by adding a little sugar and serving with maple syrup.Store up to 3 days in the fridge, or freeze up to 2 months.
