Sirloin steak is a lean, flavorful cut that cooks quickly and delivers a juicy interior with a caramelized crust. Perfect for weeknights or special dinners, it’s easy to prepare with just a few ingredients and a hot skillet.

Ingredients

  • 1 sirloin steak (1 to inches thick)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp olive oil or vegetable oil
  • 12 tbsp butter
  • 2 garlic cloves, smashed
  • Fresh herbs (such as rosemary or thyme)
  • Optional: steak seasoning, spice rub, balsamic glaze, or steak sauce for serving

Instructions

  1. Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.
  2. Pat the steak dry with paper towels. Season both sides generously with salt and black pepper.
  3. Heat a heavy skillet (cast iron preferred) over medium-high heat until very hot.
  4. Add oil to the pan. Once hot and shimmering, place the steak in the skillet. Do not move it—sear for 2–3 minutes per side to form a crust.
  5. Reduce heat slightly and add butter, garlic, and herbs. Tilt the pan and baste the steak with melted butter for 1–2 minutes.
  6. Check doneness with a meat thermometer:
    • Rare: 120–125°F
    • Medium-rare: 130–135°F
    • Medium: 140–145°F
    • Medium-well: 150–155°F
    • Well-done: 160°F+
  7. Transfer steak to a plate and rest for 5–10 minutes to retain juices.
  8. Slice against the grain and serve with your favorite sides or sauces.
