Coffee Cookies are soft, chewy, and packed with the rich flavors of coffee. These cookies balance the boldness of coffee with sweetness and optional chocolate chips, making them a perfect treat for coffee lovers.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons instant coffee granules (or brewed coffee)
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional)
  • 1/4 cup brewed coffee (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Cream the butter and sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add eggs and flavorings: Beat in the eggs one at a time, making sure each is fully incorporated. Stir in the instant coffee granules (or brewed coffee) and vanilla extract.
  4. Mix the dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing just until combined.
  5. Add chocolate chips (optional): If using, gently fold in chocolate chips into the dough.
  6. Shape the cookies: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake the cookies: Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  8. Cool: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. Serve: Enjoy your fresh, coffee-infused cookies with a cup of coffee or tea!

Storage: Store in an airtight container for up to 5 days. Freezing is also an option for storing dough or cookies.Variations: Make these cookies vegan with plant-based butter and flax eggs. You can also add nuts or make them more intense with espresso powder.
